Zingy Meatballs

Comfort food at its best! My zingy meatballs is a meal the whole family can enjoy (you can even puree up the meatballs and sauce for babies)…best of all there is some sneaky vegetables in there too! A great recipe to add to your weekly meal plan!

Meat Balls

500 Beef mince

1 Egg, lightly beaten

½ Cup of whole-meal breadcrumbs

1-2 tsp Papraki

1 tsp Crushed garlic

Olive Oil


2 Tins of diced tomatoes

½ Cup of beef stock

½ Red capsicum, diced

3 Button mushrooms, diced

2-3 tsp paprika

250g Spaghetti pasta


1.Put a large pot on the heat and cook the spaghetti until aldente. Meanwhile, place the mince, garlic, breadcrumbs, paprika, mix all together and then gently mix in the egg.

2. Roll the beef mixture into small balls.

3. Heat a fry pan on medium heat, add olive oil and brown off the meat balls (keep watch or they will stick).

4. Pour in the diced tomatoes and beef stock to the pan then add the mushroom and capsicum. Add extra paprika (to your liking) and salt and pepper to season. Mix gently with a wooden spoon and allow to simmer for about 10-15mins.

5.Serve with spaghetti!
